Thank you for reaching out. Sometimes it takes a couple of hours to update the data used for analytics.
If you want to execute the process that updates the data manually, please install and activate a plugin like WP Crontrol.
And under Tools -> Cron Events, run wc_admin_daily

Kindly note that it could be a caching issue. Could you make sure all server-side cache is cleared after running wc_admin_daily, under Tools -> Cron Events, please?
I am testing this and this was what was necessary, before seeing the correct values under Analytics > Orders.

Hi, I don’t understand how should I check if the server cache was cleared. Unfortunately that cron event alone doesn’t solve anything, some older orders are still pending despite forcing it to run

I understand that the error still persists even after running wc_admin_daily.
I’d like to understand your site properly, please share your System Status Report that you can find via WooCommerce > Status. Select Get system report and then Copy for support. Once you’ve done that, you can paste it into your reply here.
If you could also provide the fatal error logs (if any) under WooCommerce > Status > Logs.
