 * I’m wondering if there is a feature – where, if the vendor pays a subscription,
   would only then his/her profile be visible for viewing by site visitors?

    We do not have a subscription based module built into WC Vendors. There
   are many other plugins out there for subscriptions and memberships, however, 
   that could be used in tandem with WC Vendors.
