It’s flexible. If you use the standard shortcode with no arguments, all the sheets will be listed on that one page, and all the sign-ups can be handled from that one location.
If you want only one sheet to show on a specific page, then you can use a shortcode and specify the ID for that particular sheet, and then only that sheet will show on that page.
Use the Shortcodes plugin to help you generate the needed shortcodes with the various arguments you can use:
