You can use any HTML you like but the HTML generator included in the plugin will “listen” to the group type you selected in your MailChimp group settings.

When creating a group in MailChimp, you can select how you would like to show group options in your sign-up forms.

If you edit the group in your MailChimp account and then renew your plugin cache in MailChimp for WP > General the plugin should be able to pick it up and help you generate the dropdown HTML. 🙂
