Please explain better where exactly variations displayed and how it must work?
Shop page display only products and not variations, then it will always depend on product status.
For single product page enable addon “Labels for Variations”

Hello Oleg,
I will try to be as explanatory as possible.
The label in question works for products out of stock, in this case I have a variable product with two color options, blue and red, the product is available in stock, except for the blue variable, which is out of stock.
Disable the WooCommerce option to hide out of stock products, and I would like the out of stock label to be visible over the variable product image that is out of stock (the blue one).

The label should be displayed on the single product page when a product variation is selected, overlaying the product image.

We checked and it seems for variation uses only attribute condition and product condition.
We will check how additional conditions can be added to use with variations.
