 * Cannot find some product variations on the configuration options. Is there any
   limit? I just can choose about 20 or so.

    try to use this code in functions.php of your theme:
 *     ```
       add_filter( 'yith_product_variations_chosen_list_limit', 'my_limit' );
       function my_limit() { return 50; }
       ```
