 * …will all my settings and changes I’ve made whilst creating my site (and changes
   to cms, plugins etc.) on my local server stay the same when I upload my site 
   to my web host?

 * Yes, you theme & plugin settings will be preserved in the database.
 * You will need to import the database in addition to uploading the files, and 
   edit the wp-config.php to connect to the new database. You will also need to 
   update the URLs
