 * Is there any bug in WordPress 5.6?
 * We have auto-updates disabled on our website for WordPress core, but our websites
   got updated to 5.6 automatically.

 * I have reverted back to the previous version 5.3.3 and after 15 minutes it’s 
   updated back to 5.6. Not sure why it never happened before to any of our websites
   before.

 * Are you on 5.3.3? That shouldn’t have auto-updates for major releases (like 5.6)
   unless you had defined/enabled them manually.
 * With the `WP_AUTO_UPDATE_CORE` constant set to false (as per your screenshot),
   it shouldn’t autoupdate anyway.
 * Check with your host – are they forcing the update, or, is there a plugin you’re
   using to manage WordPress update?
