I was wondering if there is an integration with WP cli to bulk assign posts to a language.

Hello,

See: https://github.com/diggy/polylang-cli. I don’t know if it provides a way to bulk assign a language. However, Polylang provides it from the interface: See https://polylang.pro/doc/assign-a-language-to-an-existing-content/
