Can this module be used with the REST API instead of templates. I’d rather just query the API and get a list of results in JSON format so I can build my own interfaces.

Yes, it works with REST API.

If you perform the WP REST API search, you will get the results based on the WPES settings.

There is no separate endpoint. Just use the WP default search endpoint.
