The word Category only cannot be removed from the Page Header. However, if you want to remove the overall text, please try adding this CSS inside WordPress Dashboard > Appearances > Customize > Additional CSS:

Upon checking the issue didn’t replicated on my end with additional CSS Code being removed after updating the theme to the latest version. I suspect one of the plugins you’re using might be causing the problem, so please try deactivating all the plugins one by one and check if the problem is resolved.
Next time you update, make sure to decativate the plugin and check if the additional CSS gets removed or not!
