I found a solution! 🙂 The Enclosure Flex plugin. This plugin was created a while back, but it did the job! Very easy to use, too. You can get the plugin in here:

This will allow you too manually set enclosure tags for your posts. So, you have the ability to choose which files will have enclosure tags and ultimately picked up by iTunes.
