If not, can you share what you mean by the backorder flag, please? A screenshot using a tool like https://snipboard.io would be very helps.
In my test, the sale shows up in Analytics > Revenue and as an order in the WooCommerce mobile app.

This is not default behavior in WooCommerce to auto-complete orders unless all productsin the order are virtual and downloadable. The likely reason for this is a customization added to your site, for example with Code Snippets, or a feature being activated in your payment gateway plugin.

Have you been able to resolve this issue? If not, I recommend first checking the caching settings for LiteSpeed Cache and the payment gateway settings that control the redirection. For caching, make sure that your Cart, Checkout and My Account pages are not being cached – https://docs.woocommerce.com/document/configuring-caching-plugins/.
To narrow down if the issue is with the payment gateway, you could try another one like BACS to see if the same issue occurs.
Finally, to narrow down the cause of the 500 errors, I recommend doing some conflict testing using this guide – https://docs.woocommerce.com/document/how-to-test-for-conflicts/.

I recommend doing a conflict test, focusing on the theme only to start, to see if that narrows down the cause of the issue. I don’t see any red flags but I also was unable to replicate the issue on my test site using the same version of WooCommerce as you. One thought that comes to mind is did you rename the attributes at any point?

Also, when editing the product page, are there any errors in the Browser Console? And are there any recent fatal errors in WooCommerce > Status > Logs?

So far, if I understand correctly, if you look at a Revenue Report for one day, the export and what you see on the screen are different if an order from the date was refunded on a different day, is that right? Does the discrepancy only happen in the case of refunds?
Any chance of getting a screenshot showing the issue? Be sure to redact any private information.
