Usually a 500 error means the sitemap has run out of memory. You can try reducing the number of posts per sitemap page even lower than 1000.
You can also try increasing the PHP memory. https://ww.wp.xz.cn/support/article/editing-wp-config-php/#increasing-memory-allocated-to-php
Since it only occurs with Jetpack, you can try not using that plugin and using better alternatives that aren’t known to be resource hogs.

My .htaccess file is and has been highly modified, should I just disable it all together or install a “stock” .htaccess?
As I said, remove any customizations to your .htaccess file, and any other customizations you may have.
A theme update was also done.
Try restoring the old version of the theme.

Make sure to remove any customizations to your wp-config.php file, .htaccess, etc.Also, some background information would help.
For instance, did you recently update/install AIOSEOP, another plugin, your theme, and/or WordPress, and this behavior started then?
