Please make sure you are using the latest version of the plugin.Still, you are having the issue then you may have a conflict with a third-party plugin. So please run a test by deactivating the plugin one by one. You will find the culprit plugin.

It seems that the issue you are facing is due to the third-party plugin or theme please run a test by deactivating the theme as well as third party plugin you will find the culprit plugin.
Also please make sure your default WooCommerce emails are working fine. If WooCommerce defaults emails are working fine then Gift Card emails should also work

Please make sure that the order status must be processing or completed then only your customer will get the gift card mail.
