As per your concern regarding the grayed out. The grayed-out icons represent the create button on the right. In this case, I’d like to tell you that the creating workflows are dependent on each other, and you need to create the first five workflows in order to enable the rest of them.One by one, when you’ve created the workflows, the rest of them will be available for you.
You can turn the workflows that are of no use to you off from HubSpot > Workflows.
