Thanks, however that changed only the word Portfolio to white, not the Category names.

The solution you provided changes the highlight colour of the category currently selected. What I’d like to do is change the font colour of each category name, whether selected or not, ideally to white or slightly off-white. I’d like to leave the highlight colour red, as is.

I downloaded your Types xml update. The only way I can see to upload and install for my site is through the Plugins menu but it doesn’t work. I get this message:
The package could not be installed. PCLZIP_ERR_BAD_FORMAT (-10) : Unable to find End of Central Dir Record signatureThe Types plugin appears seperately on the left column of my WP administrator, not in the Plugings menu itself. In Types itself, I see no option to update
