The page options can only be edited while you are on the page without Elementor editor. So best practice would be to set them to your needs and switch to Elementor editor when you wish to build your content.

Please navigate to Elementor > Settings > General and check Qode Portfolio to be able to edit the portfolio custom post types with Elementor page builder.

Could you please be more specific? Could you give us some more information, which theme do you have installed?
In order to have the theme demos available you will need to install the Qi theme together with Qode Essential Addons and Qi Addons for Elementor. Only after this, you will be able to take advantage of the Qi theme demos.You would need to activate the Qi theme if you want to import the demo content.
