The category pages are archive pages which are already predefined, so they are not intended nor can they be edited with Gutenberg or any other page builder.

Have you also tried to edit the Portfolio items with Elementor. First please navigate to Elementor > Settings > Post types to see if you checked Qode portfolio.
If this does not help, we would appreciate it if you could disable the maintenance mode so we can check this or you can check our knowledge base to see for possible solution. Since this works on our side and we could not reproduce the issue on our end it is a bit hard to tell from here as we do not have enough information.You can also check if you are using any third party plugins and try to disable them to see if they are somehow making a conflict.
