At the bottom of source code of your page, you have this JavaScript loading:
appendChild(t)}e("https://ajax.googleapis.com/ajax/libs/jquery/2.2.0/jquery.min.js"Such code make loading the jQuery second time and reset all previously defined JavaScript variables. That’s why you see those JavaScript errors.
You need to find what exactly (your theme or some other plugin) make such second loading of such jQuery library and prevent to do this. More here: https://wpbookingcalendar.com/faq/loading-jquery-twice/
Relative to WordPress best practice it is not good idea to load the JS directly in the header or footer.

Currently when I try to open and test your webpage, I can see that it still cached. Please clear the cache and add the exception to the page with a booking form for do not cache this page. Then I can test more about other issues.

- You are using this cache plugin: “LiteSpeed Cache”. Please deactivate it or add the exception to the page with a booking form for do not cache this page(s).

Such capacity possible to set per calendar (it is means per days or time-slots (if you use the time fields)). And it’s means that such reduce of availability such as 20 – 3 – 5 = 12 possible via each day or via each time slots. In the Booking Calendar Business Large version, you can set capacities for your booking resources either for the entire day or for specific times within a day. For example, you could specify that your booking resource can accommodate up to 10 bookings per day in a specific calendar. Alternatively, if you use time fields in the booking form, each time slot can accommodate up to 10 bookings per day. 1) Yes, it is possible in the Booking Calendar Business Medium or higher versions. If you need to set some additional cost for the booking, depending from selected options in the select-boxes or checkboxes in your booking form, so then it’s possible to configure it at the WP Booking Calendar > Prices > Form Options Costs page. The text in your screenshots already translated in the plugin. Please open the WP Booking Calendar > Settings General page in “Translation” section and select “Local” translation instead of WordPress. Then click on Save changes button.
After this click on the “Update Translation” button.

If you defined the capacity as 15, then date/time will become unavailable, after you book all 15 slots.
It is means that if you reserves 10 places at once, that time-slot will be available. Because there still remains 5 places.

In your screenshot you have capacity 15 for booking resource with ID = 4.
If in the booking form at the WP Booking Calendar > Settings > Booking Form page, you have 2 time slots: 10:00 – 12:00 and 12:00 – 14:00, then it is means that you can do 15 different bookings for each specific time slot, until specific time-slot will become unavailable.
So your configuration already good for your conditions.
