you have inserted the shortcode like this:
[booking resource_id=5 nummonths=3]
or like this:
[booking type=5 nummonths=3]
It is means that you are define the booking form for the booking resource with ID=5. And you are using the Booking Calendar Personal version.
2) Please be sure that at the WP Booking Calendar > Availability > Days Availability page you have defined those unavailable dates for the booking resource with ID=5 (the name of booking resource with ID=5 you can find at the WP Booking Calendar > Resources page )

Before approving booking, you need to switch your admin panel to other language,
or
near the booking in the Booking Listing page, you need to find the button “change language” (button with globe icon), then switch language for this booking, and after this approve the booking. In this case system will send email in selected language.

- It’s possible to see limit of bookings per dates or time slots in the Booking Calendar Business Large or higher version.
But please note, it’s different than in your description.
If you set capacity for booking resource (calendar) as 5, it is mean that you can make up to 5 bookings per each timeslot at selected date, until such time slots will not become unavailable.
If you need to make a specific number of bookings per days or times, consider using the Booking Calendar Business Large version. In this version, you can make multiple reservations for specific date(s) or times. Unfortunately, currently it’s does not possible to configure the actual versions of Booking Calendar to show the dots or another background for the days, which was partially booked, and where calendar have the specific capacity. We will add improvements to this feature to the TODO list for having it in future updates of the plugin, but I can not say when this feature will be implemented. Sorry.
