Hi. I would like 2 create like 2 different wesbites in the same domain, with different contents for 2 different countries.

Is it possible to have 2 different menus with different Language switchwers?

Hello,
Menus in different languages are totally separated so you do whatever you want. See also: https://polylang.pro/doc/create-menus/
