Help me understand why this would be useful. Currently Postie lets WordPress manage the attachments they way it has been configured in Settings->Media
Also if only the Postie attachments were stored a a separate folder then WordPress wouldn’t know where they were.

Understood, but WordPress doesn’t support having media files in 2 separate directories.

Yes, I suppose it is possible, but I don’t have time to make that change. There are other features that have a higher priority on my time and these other plugins could help you solve this problem.
