Thank you for reaching out to us, I am not sure which plugins are adding JS for GDPR, but we will recommend using WP GDPR Cookie Notice plugin. Which is compatible with AMP and doesn’t need you to add JS for it.

You can find more AMP compatible plugins on the AMP ecosystem page.

In case you want to add a script you can learn more about amp-script but it has limitations as it runs on web worker and can’t work with many DOM API’s.
