1) The Booking Calendar Free version support only one default booking resource (room). But you can activate the receiving the unlimited bookings (at the Booking > Settings General page), and to have selectbox for selection of specific option (room) in booking form. But this will not prevent from overbooking.
2) The ability to have independent calendars possible in any paid versions of Booking Calendar. Check more here https://wpbookingcalendar.com/overview/#booking-resources

Free version does not have resources (rooms). Free version support only one default resource, that’s why no Booking > Resources page. I was explained in previous comment about how to make “trick”.
Unlimited booking resources available only in paid versions of Booking Calendar.

Why would I want to try a hotel booking plugin that I can not put rooms in it so people can book their room?

In the Booking Calendar free version. You can do this for receiving bookings on specific date and receive info about what Room, visitor want to book.
1) Please open the Booking > Settings > Form page. Create new “select” field and enter title “Select Room”
In the options for this field enter names of your rooms. One room name per line, like
Room A
Room B
Etc…
Add this field to the booking form.
2) Now open the Booking > Settings General page and in Advanced section activate this option “Allow unlimited bookings per same day(s)”. Save settings.
3) Now add the booking form to the front end side (add widget or insert booking shortcode into content of page).
So now when visitor select date(s) and fill the booking form, you will see what room visitor want to book at what date.
But the days in calendar with this configuration will be always available.
