I actually have 2 questions… Any idea how long it takes to see the AMP symbol in Google next to a page? Or how can I check that everything is working properly?

What is the URL for your site? Given the URL to an AMP page, you can test for validity via https://validator.ampproject.org

Alternatively, you can use Google Search Console for additional checks: https://search.google.com/search-console/

And second, is there a way to add a script somewhere? I’m part of an aff network and their ads only work with the help of a script.

Custom scripts are not support in AMP. To add ads, you’ll need to use components like amp-ad: https://amp.dev/documentation/components/amp-ad
