I’d like to customise the fonts. On your dynamic styles page there is a font selector there — can I get additional fonts to show up in the drop-down list, or is there a simple way to override this setting?

To add additional fonts you need to edit /functions/theme-options.php and /functions/dynamic-styles.php. It may be easier to try a plugin to add the fonts you want instead. I haven’t tried it, but here is one: https://fontsplugin.com/
