You can change the colour of headlines in the Site Editor.
In the Styles sidebar go into Blocks (below “Customize the appearance of specific blocks for the whole site”) > Heading > Colors > Text where you can change the colour of the Heading block (H1, H2, H3, H4, H5, & H6).
Right now you cannot make H1 a different colour or size than H2 or H3 in the styles editor, but this should hopefully be possible in a future version of the site editor, as there is work underway to add this functionality.
If you want to change the colour and size of each heading level individually, right now you would need to define these in the theme.json file of a child theme.
Some other blocks such as Site Title and Post Title are also headings and these can also be edited in their block style options. For example the Site Title is a H1 heading and this colour and size can be different to the H1 heading color in the general Heading block, and of course you can change the colour of any individual heading block that you have added in content in the post/page editor.

It is ok, to change the colour of all headings. I don’t want to change only h1 or only h2 or ….

I have found my mistake!
I didn’t select the element, for which I wanted to change the colour – the element text underneath the colourpalette.
It is working now and I have learned a lot. And I like your full site editing theme.
