Am not from the WordPress team but I think the question is asked in the wrong forum. The question is about using the FSE/Gutenberg builder.
There are several ways to get to the desired design. The key is to use the options that are related to the width, alignment, and dimensions of the block.
A potential reason for that gap is how the dimensions of the block are set, which you can access after selecting the post title block and clicking on the Styles icon [it is the white-black circle in your screenshot, located next to the gear icon]. After you access there, check the padding and margin settings, and change to 0 to remove the gap.
Another potential solution: add a column block just under the title, and drag your post date block into this created column. If not solved, try checking and changing this column’s settings such as its width, alignment, and dimensions settings.
I hope one of the suggestions might lead to the desired appearance.

You got me onto the right path. For anyone else reading, I think the issue is that my Content Block was set to a specific width (1200px), while my Title was set to Wide Width.
But adding additional blocks, like Date, didn’t offer me an obvious width option. However, putting in a Column block, setting that to the same specific width (1200px) and adding the Date block inside that did the job.
