Please explain if this feature provides GDPR-compliance. I don’t see where I can set the password for this type of backup encryption. Does this mean that Amazon will have the key? What is the difference with Dropbox then where encryption is not mentioned as a feature in the free version of your plugin?

Yes, enable “Server-side encryption” will let AWS do the encryption for you, on their server.
For GDPR question, I did a check and found that AWS is compliance too: https://aws.amazon.com/compliance/gdpr-center/
For more information about Amazon S3 GDPR, please ask the Amazon support ^^
