Thanks for contacting us, I have checked your website and AMP processing is ok, as we can see in the image below:

I would check what is consuming resources on the server-side to cause a higher server response, the AMP cache is only for organic traffic when is eligible, it won’t replace the general cache plugin.
I saw that you have installed Jannah Speed Optimization and Jetpack, I would check the optimization options available in those plugins.
Last, I would look at image optimization, use a new image format to reduce the image size:

I suppose Jannah Speed Optimization is not a page caching plugin?
