    Would it be possible to change the system so when sumbiting an application for a job it should show the members username instead of the resume.

    Yes, it is possible through customization. First, you need to understand the SJB code structure and then customize its code as per your needs. For a glimpse, we can tell you that please customize the following template:
    simple-job-board/templates/single-jobpost/job-application.php

    Please use the SJB templating feature instead of changing its core files directly.

    You can explore class-simple-job-board-meta-box-job-application.php file to add extra form field which is placed in the following directory:
    simple-job-board/admin/meta-boxes/class-simple-job-board-meta-box-job-application.php
