I have a category and each product has 2 variations. Let’s call it A and B

A costs X
B costs $22 more

How can I add the variation and the upcharge across the entire category vs having to go in to each product individually? (there are about 100 products)

Okay, if I understand correctly you want to edit the price of the second variation for each of the products under a category. Is that right?

Out of the box, WooCommerce does not provide such bulk editing functionality for variations. You can use plugins like these for such bulk edit –

PW WooCommerce Bulk Edit
Bulk Edit Products, Prices and Attributes

Alternatively, you can use the product import-export feature to update variation price for a large number of products – Product CSV Importer and Exporter
