Hi there 🙂 I think detailed answer to your question concerning articles is in the articles extension description. It says where it adds what, but in short, it does add something to your posts even if you don’t have AMP.
Also, is there a redirect manager extension available?
It has been requested couple of time and it is planned down the line. Due to the fact that there are other solid redirection plugins it is not a priority at the moment. We talked about this here and I provided some alternative approaches.

I did read that help page which prompted me to ask the question.
I guess what i was really asking was will using the articles extension force my mobile pages to display as AMP pages?
I would like to avoid this as AMP takes away a lot of the aesthetics of a page!

Well if you don’t have any AMP plugin, it will not. Simply because the extension just takes care of metadata, not really about design or CSS. On the sidenote, I hate AMP as a whole too, so we have that in common 🙂
