The feature to add attributes is not available on the free version of Dokan.
If you have the paid version and you want to use the WooCommerce attributes you need to set the type and order by as mentioned: https://prnt.sc/s1lqzp
Then the attributes list will be visible to the users. Please follow the procedure and let me know the result.

Attributes for the vendor is a Dokan Pro only feature. If you are only using Dokan Lite then you will not be able to see it on the vendor dashboard. To check our Dokan pro feature use this demo.

@rur165 thanks for the demo links tired it however it is involves multiple step in pro too like
1. i need to create product i.e simple
2. now change the product as variable product in edit mode
3. now select the attribute
why can’t i select the attribute or product type when adding a new product

At the current stage, Dokan only allows you to configure the attributes or variation on the second step. As most of the vendors want a simple screen while adding products we have kept it in two steps so that it is suitable for both simple & advanced users.

Bringing the attributes in the first screen will customization which is beyond the scope of this forum. If you want to know how to add additional fields in the product upload form then you can see this article – https://nayemdevs.com/how-to-add-a-new-field-on-product-upload-form-dokan-multivendor/
Depending on your use case you have to modify it.
