1) In order for that to happen, the plugin needs to know the username of the person who is submitting the form. As far as I know, there is no way to get that information unless the user is logged in to WordPress. Just how WP works.
2) You can view Custom Fields like Email, URL, and IP Address in the Custom Fields panel, which is located beneath each submitted post on the Edit Post screen.
Oh wow. Thank you so much for a quick and detailed response. I found the custom fields, and while disappointed about the plug-in, if it’s the way it works, it’s the way it works.
