Backup plugin data before uninstalling

I’m doing some support for a client. They want some changes to be done to user roles and I see that they have Advanced Access Manager already installed, however the options are not appearing in the admin sidebar where they should be, so I cannot make any changes. I looked this up and it seems if I uninstall and re-install the plugin the options should appear. The only issue is that there are already multiple users set up with custom roles and deleting this plugin will delete the role data for each user. Is there anyway I can save the data just for this plugin so that after I uninstall and reinstall, no data is lost and the users maintain their roles?
