The first thing to do is rule out any plugin errors or conflicts.
Temporarily deactivate all your active plugins (no need to delete plugins, just deactivate them), and then try to update the page template.
If this works and the page template is able to save correctly, then re-activate your plugins one-at-a-time and try to change the page template after activating each plugin. When you get to the point where you cannot update the page template, this will tell you which plugin (if any) is causing the error.
If you don’t find a plugin conflict, please let me know.
It is important to do this and not miss out any plugins or just assume that all plugins are ok, as it is a process of elimination, and without doing this process it is very difficult to know where to look to find the issue.

it’s the page “boutique”
Your “Boutique” page is the page that is set as your WooCommerce “Shop” page.
When a page is set as the main WooCommerce shop page, that page then becomes a special archive and does behave the same as other pages. This is just how WooCommerce works.
You will notice that in the page editor, the page template option is not available when editing the “Shop” page, but it is still available when clicking the ‘quick edit’ in the list of pages but it really shouldn’t be available here to avoid confusion.
Sorry it is outside the scope of the theme to make the page templates available to pages that are not really true pages, such as the WooCommerce shop archive.
