Block quote rendering

The plugin provides a single, built-in style for all elements with some configuration options available on the Apple News settings page. What you’re describing would require creating a custom component. You can use the apple_news_generate_json filter to override the output with your style or create a custom component class for it and add that using the apple_news_initialize_components filter. We are looking to provide more granular control over the JSON output in a future version.
