But problem is what you really want?
http://roccadibaiedo.progettomedioevo.it/news/ is your blog page ?
Then you don’t use “THEME OPTIONS>BLOG” as you wrote above, but Settings->Reading and there you define what is your blog page (static main+blog, or only blog).
These are basic WP settings, has nothing to do with Hueman – any theme you choose you’ll have to adjust like this.
I first looked at you main page that is static- with sliders that are not made in Hueman – but now I understand more.
As I click on category “Attività” – and you have 1 more post belonging to this category http://roccadibaiedo.progettomedioevo.it/canyoning/ – nothing shows.
This cannot happen – if basic WP setting are normally tuned (regardless of theme you are using)
So – my advices are slightly different now:
1-if this is your first WP blog – learn basics of WP (Google etc) – I have no time to write WP schools, there are tons of it around or go to WP basics https://codex.ww.wp.xz.cn/Main_Page
2-If not – you are making some basic mistake – deactivate all plugins 1 by 1 and see what is left + LMK how it behaves
Why I started with plugins – some poor written can cause a lot of troubles.
Still willing to help, but try also to help yourself (at least trying above suggested)

but “Anyway” you haven’t been “sufficiently clear ^^'” for me, or anybody English speaking (I’m also not native speaking English, but…) – far from it.
And “Anyway” – I’ll do my last effort to offer you support.
Step by step – if you want to reply short & precise:
1-Have you defined (I don’t have access to your blog) in “Settings->Reading Settings->Front Page” http://roccadibaiedo.progettomedioevo.it/ (Welcome… )as your static home page?
2-As I see from source, you did it – and what do you expect to appears there? Any static page in WP is basically used as you did it now – for “Welcome” or some “About”, “Contact” etc.
You can have only 1 “blog page” (latest posts etc) in WP.
So, what you wrote above “1. Start page show my last articles. (I don’t want this)” -has nothing at all with WP logic + at the moment it is not showing your last articles at all????
3-“Settings->Reading Settings->Posts Page” – have you defined it as http://roccadibaiedo.progettomedioevo.it/news/ ?
4- “2. Start page static (benvenuti) and articles page (news).
I want this. But with this selection the articles page (news) doesn’t work as I’d like.” – how & what do you “like”, if you did suggested above?
5-I wrote above –
-on http://roccadibaiedo.progettomedioevo.it/news/ you have 1 post from “ATTIVITÀ” category – clicking on it leads nowhere – instead of showing all posts from that category – shows nothing.
That is cardinal mistake.
5-How many categories you have + how many “normal” posts you have belonging to these categories?

Conclusion – supply this info if possible + try to be precise – otherwise I really give up – already spent much time examining your plugins, website etc
Also suggested to turn off plugins I marked with”?” and see how it behaves in native hueman theme, have you tried it?
Or – change theme to WP 2014 for example (if U suspect Hueman is causing problems) – suppose it will look even worse.
