Hi, I’m trying to understand how the booking flow works with the SimplyBook.me plugin.
Does the entire booking process happen directly on my site, or clients might be redirected to another website at some point? Also, does it support connecting a Mercado Pago account for client payments?

Yes, the plugin allows you to embed the SimplyBook.me Booking Widget directly on your WordPress site. This means that your users do not have to navigate away from your own website to complete the booking.
