    Is there any easy way to change the format/content of the text produced by _BOOKINGSUMMARY in emails?

    Create the directory wp-content/plugin-templates/events-manager/emails then copy wp-content/plugins/events-manager/templates/emails/bookingsummary.php to that directory then modify the copied version.

    I assume that if I do as you suggest then when any updates are done I will lose my changes?

    No, the files under wp-content/plugin-templates don’t get modified when there are plugin updates.
