Break up pages

Is there any way to break up the pages to make them smaller.

I don’t want a long list of posts per page and would like to make them smaller by including Next Page for all my categories.

I hope I’m describing this good enough.

Is there a way to force a next page? How is this done. Does it have to be done for each category?
