@ostonegi as a temporary fix can you try one of the following:
1. Select a different image size (large or original should work)
2. Roll the plugin back to 2.0.1
Also please can you supply your current widget settings (image size, Instagram username) and website. It would also be useful to know where in the world the site is hosted.

If you are still having issues with images loading then it would be good to understand the cause. It is possible that Instagram are A/B testing some changes which is leading to the different results.
If they are testing other variations I will need to know more about them, the plugin is currently working as expected for me.
So if you are experiencing issues I suggest:
1. Clear your transients: https://en-gb.ww.wp.xz.cn/plugins/artiss-transient-cleaner/
2. Clear any other website or server caches
3. Try rolling back (test 2.0.0, 2.0.1)
4. Provide a link to your website and where it is hosted
5. Provide the username you are using and ensure it is public
6. print_r( $insta_array ); on line 220: https://github.com/scottsweb/wp-instagram-widget/blob/master/wp-instagram-widget.php#L220 and provide me with the output
7. Transfer me lots of bitcoin 😉
