Your cache status is “Bypass” are you using Cloudflare?
When Nginx caching is enabled with default settings, all pages with a cookie (even _gid only) are not cached by default, the response header contains: x-cache-status: BYPASS
You can read more about this here: https://support.plesk.com/hc/en-us/articles/12377107676567-When-Nginx-caching-is-enabled-with-Plesk-s-default-settings-all-pages-with-a-cookie-is-not-be-cached but my recommendation would be to disable the NGIX caching.

I’ll disable nginx caching and get back to you. Please not that it used to work with nginx enabled, and the second website I’m running cache works with nginx caching enabled also.

Yep, the update seems to have fixed it. It hit 150 processes rendering my website unavailable late at night last night so it’s working now
