You can use the shortcodes the plugin provides: https://sweetcode.com/docs/wpm/developers/shortcodes
Basically you create a thankyou page to which your form redirects after a successful submission. On that thankyou page you place the shortocde that will fire the conversion for you.

Since the plugin initialises gtag for you, you’ll only need to attach an event to any element in your theme and fire a gtag event.

In general I would still recommend the method with the shortcodes.
