MonsterInsights like all WordPress plugins have to be listed on the plugins page if it is installed. If you removed MonsterInsights but still see the tracking code being output on the frontend, you have either a caching plugin or your hosting provider has a caching service active that has to be cleared so that the page source code is updated.
As MonsterInsights is a Google Analytics integration by definition all tracked data goes directly to Google Analytics and to make the reports, the plugin pulls back the data from Google Analytics using their APIs, so it’s not possible to have data in the MonsterInsights report but not in Google Analytics. It could be that you are possibly looking at the wrong Google Analytics Property or View. I recommend checking the UA code being used to track on your site against the one for the property you are looking at in GA — if they’re not identical it’s the wrong property.

Our free version exists to allow average websites to get the essential tracking and reporting implemented easily, and for more complex tracking like enhanced WooCommerce tracking we sell a Pro version for that.
