To assist you further, could you please provide more information about the error message you are seeing when trying to save changes in the settings? Also, could you specify exactly what changes you are attempting to save that are not being applied? - System Status Report which you can find via WooCommerce > Status > Get system report > Copy for support.
- Fatal error logs (if any) under WooCommerce > Status > Logs.
