What errors are you seeing?
Are you seeing the same errors when you edit other posts of any post type?
Are you using any page builders during this process? or is it just block/classic editor for that editing experience?

Hello,
I’m using gutenberg editor for editing.
I cannot edit any page of this category https://www.peggyzina.com/10996-2/
when I click publish or update, nothing happens.
Best guess I have is that there’s some sort of javascript error occurring that’s preventing the rest from executing.
Not sure how much you could potentially do here, but disabling other plugins temporarily till it’s just WordPress core and CPTUI is one way to debug and deduce what else may be interfering in the process. Then re-activating intended plugins one by one and re-checking the edit ability after each until the issue returns can isolate which is doing the interfering.
Beyond that, I don’t really have any concrete answers for you for what to check out right now.
