Is there a way to organize the Categories page so that it orders the list in terms of Parent hierarchies? The default just has a list of all categories. I’d like to see categories under their parent categories.

you might need to modify template file at events-manager/templates/templates/categories-list.php

to use templates: http://wp-events-plugin.com/documentation/using-template-files/

you can also try to use attributes from http://codex.ww.wp.xz.cn/Function_Reference/get_terms
